Easy Banana Bread Recipe

Who doesn’t love Banana Bread? I love making up this banana bread recipe for my kids lunches. (without the nuts of course.) I also enjoy the smell of it baking in the oven.

If you are going somewhere and want to give the host something as a thank you.  A few loaves of banana bread is great for just that.

Check out this easy banana bread recipe for you and your family to enjoy.

Easy Banana Bread Recipe

Ingredients

  • 4 ripe bananas. (You can use 3 but I find more increases the taste of the bananas.)
  • 1/2 cup of sugar
  • 1/2 cup of vegetable oil
  • 2 eggs (beaten)
  • 2 cups of flour. (I use whole wheat at a ratio to 1:1 but you can use white.)
  • 1 tsp. of baking soda
  • 1/2 tsp. of salt
  • walnuts (optional)

Instructions

  1. Preheat oven to 350oF.
  2. Mash bananas in a mixing bowl.
  3. Add sugar, eggs and oil. (Mix each ingredient in before adding the next one.)
  4. Sift dry ingredients together then slowly add to banana mixture. Mix each part together.
  5. Pour into a greased 5x9 pan (Add your walnuts at the top. I just sprinkle it in. Bake for 50 minutes or until you can put a fork in it and it comes out clean.
  6. I usually do muffins or mini loaves with this recipe and find within 20 minutes they are usually done.

Wrapless Burrito with Seeds of Change Rice Recipe

I love coming up with new recipes that I can make for my family that are good for us and also taste great. Since having my kidney transplant, I like making sure that we are eating the best for our bodies.

So yesterday, I decided that I would make Wrapless Refried Bean Burritos with Organic Spanish Style Rice from SEEDS OF CHANGE® with fresh vegetables from my garden. The SEEDS OF CHANGE® Spanish Style Rice is organic wholegrain rice with quinoa, red bell peppers and corn.

Wrapless Refried Bean Burrito with Organic Rice

Ingredients

  • 1 package of Seeds of Change Spanish Style rice
  • 2 Green Pepper (you can add 2 if you want more.)
  • 2 Tomatoes
  • 1 can of refried beans
  • 1 cup of light shredded cheese. (I used marble)

Instructions

  1. Dice up tomatoes and peppers.
  2. Heat rice in pot for 90 seconds with 2 Tbsps of water.
  3. In a frying pan, add green peppers and tomatoes just warming them up while the rice is cooking.
  4. Place rice in with vegetables and turn pan on low.
  5. Heat up refried beans on stove or microwave.
  6. Place rice on plate and top with refried beans then add sour cream and top with shredded cheese.
  7. Optional: Salsa.

First you add the ice and the yogurt together. Then blend until the ice is broken up.

Then place in the pineapple. (Don’t use as big as a measuring cup as I did. I had made a few smoothies that morning so I had a whole pineapple chopped up in there. )

Then blend again and enjoy! You can make the flavour more exotic by making ice from coconut water.

It is an easy to make recipe that can be enjoyed anytime.  The best part is putting it in a travel cup allows you to take it on the go for your morning walk or for traveling to work.

Summertime Pineapple Smoothie

Ingredients

  • 1 cup low-fat vanilla yogurt
  • 8 ice cubes
  • 1 1/2 cups pineapple chunks.

Instructions

  1. Place ice cubes and yogurt in blender and blend until ice is broken apart. Then add the pineapple and blend until smooth.
  2. Place lid on cup and enjoy!
  3. You can also make ice cubes with coconut water to make it more like a tropical drink. I just used regular water ice cubes.

Smoothie Recipes to Enjoy at Home

 

I am trying to eat and drink healthier foods since receiving my kidney transplant. I find that smoothies are a great way to get a lot of the fruits, vegetables that you may not get in your meals. It is also easier to hide certain fruits and vegetables, if you have a child who will not eat them as often.
