Potato Omelette #CheapEats

Here is another cheap and easy recipe when things are tight or if you want just a quick and easy meal!



Potato Omelette

What You Will Need:

1 Tablespoon of Butter

1/2 Onion Peeled (sliced fine)

1 Large Potato (scrubbed & finely sliced)

2 Large Eggs


Melt Butter in frying pan and add onion.

Cook over medium heat and occasionally stirring the onion. Cook until onion is brown.

Add potatoes and 3 tablespoons of water.

Cover and cook. Occasionally stirring until potatoes are soft but not broken or mushy.

If it starts to stick on bottom add more water.

Mix eggs with a pinch of salt in a bowl. Pour over potato mixture.

Gently stir to make sure eggs fully cover all the potatoes.

Cook until eggs look fluffy.


Servings cost $1 or less!

**note you can change out the onion and add any vegetable you wish!
