Simple Recipes – Prosciutto and Roasted Red Pepper Sandwiches

 

 

 

This recipe is a hit on warm summer days when you don’t feel like cooking!

Prosciutto and Roasted Red Pepper Sandwiches

 

Ingredients:

  • 1 baguette

  • 2 tablespoons Dijon mustard (I don’t like dijon mustard so I will admit I have used yellow mustard)

  • 4 ozs. thinly sliced Prosciutto or Salami

  • 4 ozs of sliced cheese (Asiago, Parmesan or some other hard cheese.)

  • 1 – 12 oz jar of foasted red peppers , halved

 

Directions:

  • Slice the baguette in half horizontally.

  • Spread the bottom half with the mustard and layer with the prosciutto, cheese, and red peppers.

  • Sandwich with the top of the bread and cut crosswise into 4 sandwiches.

 

Add a side salad and it becomes a perfect summertime meal!
