Warmer weather usually means more potlucks and BBQ dinners. I love having potluck dinners because it allows us to try a new dish we may have not had before. It also means less time having to cook a big meal for everyone.  Sometimes it is easy to get stuck in a rut making the same meals for every dinner. Basic Pork Ribs ~ Simple Recipe

 

 

 

Basic Pork Ribs

 

BBQ Ribs 13

Ingredients:

  • 3lbs Side or Back Pork Ribs

  • 1Tbsp Freshly Ground Pepper

  • 1 tsp Red Pepper Flakes

  • 2tsp Dried Thyme Leaves

  • 1 to 2 cups of Your Favourite BBQ Sauce

 

Directions:

 

In a small bowl, mix together black pepper, red pepper flakes and thyme. Sprinkle over ribs and place on a baking sheet with meaty side up.

Add hot water to the baking sheets to give about 1/4 inch depth.

Cover baking sheet with foil and place in oven.

Bake at 325 oF until meat begins to recede from rib tips. (about an hour for back ribs and 2 hours for side ribs)

Remove the ribs and discard liquid from tray.

 

 

Follow these instructions for what way of cooking you wish to use.

 

Oven:

  • Increase oven to 450 oF.

  • Brush BBQ sauce on one side of the ribs and cook for about 5 mins or until sauce is bubbly and golden-brown.

  • Turn ribs over and brush on remaining BBQ sauce and cook for 5 more mins.

Grill:

  • Place ribs on a medium-low heat and grill for 15 mins brushing BBQ sauce and turning occasionally.

 

Raspberry Peppercorn Tenderloin Recipe

Raspberry Peppercorn Tenderloin

Ingredients:

1lb Pork Tenderloin

3Tbsp (50mL) Raspberry Jam

1Tbsp (15mL) Coarsely Cracked Pink Peppercorns (or black pepper)

 

Directions:

Place raspberry jam and tenderloin in a sealable plastic bag for 30 mins or overnight.

Place peppercorns on a large dinner plate.

Remove the tenderloin from the bag and roll onto the peppered plate. Roll and massage the peppercorns into the tenderloin

Pre-heat barbecue to high heat and reduce to medium-high just before grilling.

Cook tenderloin for 5 minutes until all sides are done for a total of 15-20 minutes (or until internal temps reach 155 oF)

Remove from heat, let it rest under tinfoil for 5 mins to allow internal temp rise to 160 oF.

Slice and serve with desired side dishes.
