Yesterday he was sore and when he went to bed he said to me ” Mommy my brain is confused. I looked at my arm and saw no cast, I thought to myself, did I break it off? Then I remember that I had it taken off today!” Today it is doing well and he still has 2 more weeks of babying it and protecting it and then he should be good. spencer6

Slow Cooker Hoisin Honey Pork Ribs is great for a meal with a side dish or for a potluck.

Slow Cooker Hoisin Honey Pork Ribs

Great for a meal or a potluck
Ingredients
  • ½ cup honey
  • ⅓ cup soy sauce
  • ½ cup hoisin sauce
  • 2 garlic cloves
  • 3 lb (1.5kg) pork side ribs trimmed of fat and cut into 3 portions
Instructions
  1. Combine hoisin sauce, liquid honey, soy sauce and garlic in a large bowl.
  2. Set aside ⅓ cup of the mixture.
  3. Add ribs, stir well until coated.
  4. Transfer to 3.5 to 4L slow cooker.
  5. Cover and cook for 8 to 9 hours over low heat or 4 to 4 ½ hours over high heat.
  6. Prepare the ribs to a serving plate.
  7. Brush with reserved mixture.
  8. Serve immediately with mashed potatoes, salad or your favourite side dish

Ingredients
  • 1 (14 oz.) can Sweetened Condensed Milk
  • 1 tablespoon peppermint extract
  • Green or red food coloring (optional)
  • 6 cups powdered sugar
  • 1 1/2 pounds chocolate melts *
Instructions
  1. LINE baking sheets with wax paper.
  2. COMBINE sweetened condensed milk, peppermint extract and food coloring, if desired, in large bowl. Add 6 cups powdered sugar; beat on low speed until smooth and well blended. Turn mixture onto surface sprinkled with powdered sugar.
  3. KNEAD lightly to form smooth ball. Shape into 1-inch balls. Place 2 inches apart on prepared baking sheets. Flatten each ball into a 1 1/2-inch patty.
  4. LET dry 1 hour or longer; turn over and let dry at least 1 hour. With fork, dip each patty into warm chocolate melts (draw fork lightly across rim of pan to remove excess coating). Invert onto wax-paper-lined baking sheets; let stand until firm. Store covered at room temperature or in refrigerator.
  5. *Also called confectioners’ or summer coating.

Ingredients
  • 1 pound of Smoked Sausage (sliced)
  • 1 large Onion (sliced)
  • 1 Green Bell Pepper (sliced)
  • 2 Cloves of Garlic (chopped)
  • 1 tablespoon of Extra Virgin Olive Oil
  • 1/4 cup Chicken stock
  • 1 baguette (split , quartered and toasted)
  • 4 slices of Provolone Cheese (can use any brick cheese you wish)
Instructions
  1. In a large skillet, cook sausages in olive oil over medium heat until brown. (approx 6 mins) Then transfer to a plate.
  2. Cook bell peppers, onions and garlic over medium heat for 3 minutes.
  3. Then stir in sausages and stock.
  4. You can also add seasoning if you wish. Whatever spices you want.
  5. Cook for 3 more minutes.
  6. Toast baguette in oven. Take it out when nice and toasted.
  7. Then put meat mixture on bottom of baguette and place cheese on top.
  8. Enjoy!
