Mini Rolo Cookies

I love doing a big bake at Christmas time and I will tell you this is one desert everyone loves!

If I don’t freeze a batch (hide it deep in the freezer) then there would be none for Christmas day!

Mini Rolo Cookies

Serves: 75 cookies
  • 2-1/2 cups flour
  • 3/4 cup cocoa
  • 1 tsp baking soda
  • 1 cup white sugar
  • 1 cup firmly packed brown sugar
  • 1 cup butter, softened
  • 2 tsp vanilla
  • 2 eggs
  • 75 mini Rolo chewy caramels
  • walnut halves for garnish (optional)
  1. Step 1: Combine flour, cocoa and baking soda.
  2. Step 2: In separate bowl, beat sugar, butter, vanilla and eggs.
  3. Step 3: Stir in flour/cocoa mixture.
  4. Step 4: Chill dough for 1 hour.
  5. Step 5: Shape about 1-1/2 tsp of dough around a mini Rolo, making sure Rolo is completely covered.
  6. (If you are using walnut halves just place them in a bowl and dip the ball of dough before you place it on the cookie sheet )
  7. Step 6: Cool on cookie sheet for 1 hour in fridge
  8. Step 7: Bake 7-8 minutes at 375ºF.
  9. Step 8: Cool on wire rack.
  10. Makes 75 cookies

Grilled Cheese & Bacon on a Pillsbury Crescent Roll Recipe




The other night I was trying to decide what to make for supper. I didn’t feel like a big meal but didn’t want take-out either. Then I decided on Grilled Cheese and Bacon but thought why not use the Pillsbury Crescent Rolls I have in the fridge waiting to be used.

So I made this very simple recipe and the kids loved it! I think I might change it up next time and add some tomatoes into it as well. A side salad went really well with this recipe. Below is the recipe but feel free to make it your own by adding what you like or try experimenting with different cheeses or meats.

Grilled Cheese & Bacon on a Pillsbury Crescent Roll Recipe

A simple meal for nights you don’t have time to cook or don’t want Take-Out
  • 6 pieces of Low Sodium Bacon cut in half to make 12 pieces
  • 1 tube of Pillsbury Crescent Rolls
  • 1 340g bar of Cheddar Cheese
  1. Cook bacon in frying pan until the texture you like.
  2. Shred cheddar cheese while bacon is cooking.
  3. When bacon is done set it on a paper towel on a plate to get rid of bacon grease
  4. Set oven to 375oF
  5. On a baking sheet roll out the Pillsbury Crescent Rolls
  6. put one or two pieces of bacon in the rolled out Pillsbury Crescent Roll & sprinkle cheese on top.
  7. Roll the roll over. I also tucked the sides so the cheese wouldn’t ooze out.
  8. Do it for all the Crescent Rolls.
  9. Put in oven when the oven is at the required temp.
  10. Cook for 10-15 minutes until Crescent Rolls are golden brown.
  11. Serve with a side salad or some fries.
  12. Enjoy!

Crock Pot Apple Cake Recipe

  • Filling:
  • 21 oz. can of Apple filling (You can use any fruit filling you wish)
  • 1 tsp of Cinnamon
  • 3 tsp. Brown Sugar
  • Batter:
  • 1/2 c. of sour cream
  • 18-20 oz of cake mix (you could also use muffin mix instead)
  • 1/2 cup of evaporated milk
  • 2 eggs {beaten}
  • 2 tsp. softened butter
  1. Mix all of the filling ingredients together first and put aside.
  2. Mix the batter ingredients together.
  3. Add the cooking spray generously in the crock pot, and add 1/2 of the filling to the bottom of the pot.
  4. Add a layer of the batter, followed by another layer of the filling.
  5. Continue that pattern until you are out of filling and batter.
  6. Set your slow cooker on high for 2 1/2 hours.
  7. Remove the lid, turn the cooker off, and let it cool for about 20 minutes.

A great meal for a cold rainy day!
  • 1 tablespoon butter
  • 2/3 cup chopped onion
  • 2/3 cup chopped celery
  • 3 cups chicken broth
  • water
  • 2 cups chopped chicken (a great time to use left over chicken)
  • 3 cups egg noodles
  • 1-1/3 cups sliced carrots
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  1. In a large pot over medium heat, melt butter.
  2. Cook onion and celery in butter until just tender, 5 minutes.
  3. Pour in broth and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Add water until all the ingredients are covered with liquid.
  4. Bring to a boil, then reduce heat and simmer 20 minutes before serving. Serve with a loaf of crusty bread.

A great meal for a large family or to make sure you have leftovers!
  • 1 package elbow macaroni
  • 1 pound ground beef
  • 1 taco seasoning from Mrs. Dash
  • 3/4 cup water
  • 2 tablespoon of butter
  • 2 tablespoons all-purpose flour
  • 2 cups of milk
  • 300g bar of cheddar cheese
  • Topping:
  • chopped tomatoes, green onion, sour cream, salsa
  1. Prepare pasta according to package directions. Drain and keep warm.
  2. Brown ground beef in a nonstick skillet over medium-high heat until no longer pink. Drain.
  3. Return beef to skillet; stir in taco seasoning mix and 3/4 cup water. Bring to a boil, and cook, stirring occasionally, 7 minutes or until most of the liquid evaporates. Remove beef mixture from heat.
  4. Melt butter in a large saucepan or Dutch oven over medium-low heat; whisk in flour until smooth. Cook, whisking constantly, 2 minutes. Gradually whisk in milk, and cook, whisking constantly, 5 minutes or until thickened. Remove from heat.
  5. Stir in 1 1/2 cups cheese, stirring until melted. Stir in cooked pasta and beef mixture. Sprinkle with remaining 1/2 cup cheese. Serve immediately with desired toppings.

The best blueberry muffin recipe
  • 2 cups of Flour
  • 1/3 cup of Sugar
  • 3 tsp Baking Powder
  • 1 cup Blueberries
  • 1 cup Milk
  • 1 Egg Beaten
  • 1/2 tsp of Salt
  • 1/3 Butter Melted
  1. Preheat oven to 400 oF
  2. Mix flour, sugar, baking powder, salt and berries in a bowl. Add milk, melted butter and egg to the dry ingredients and mix together with a fork until completely wet.
  3. Batter will be thick and lumpy.
  4. Fill muffin liners with batter and bake for 20- 25 minutes.
