Ingredients

  • 4 ripe bananas. (You can use 3 but I find more increases the taste of the bananas.)
  • 1/2 cup of sugar
  • 1/2 cup of vegetable oil
  • 2 eggs (beaten)
  • 2 cups of flour. (I use whole wheat at a ratio to 1:1 but you can use white.)
  • 1 tsp. of baking soda
  • 1/2 tsp. of salt
  • walnuts (optional)

Instructions

  1. Preheat oven to 350oF.
  2. Mash bananas in a mixing bowl.
  3. Add sugar, eggs and oil. (Mix each ingredient in before adding the next one.)
  4. Sift dry ingredients together then slowly add to banana mixture. Mix each part together.
  5. Pour into a greased 5x9 pan (Add your walnuts at the top. I just sprinkle it in. Bake for 50 minutes or until you can put a fork in it and it comes out clean.
  6. I usually do muffins or mini loaves with this recipe and find within 20 minutes they are usually done.

Wrapless Burrito with Seeds of Change Rice Recipe

Seeds of Change

I love coming up with new recipes that I can make for my family that are good for us and also taste great. Since having my kidney transplant, I like making sure that we are eating the best for our bodies.

So yesterday, I decided that I would make Wrapless Refried Bean Burritos with Organic Spanish Style Rice from SEEDS OF CHANGE® with fresh vegetables from my garden. The SEEDS OF CHANGE® Spanish Style Rice is organic wholegrain rice with quinoa, red bell peppers and corn.

The best part? (Besides being organic) It heats up in the microwave for 90 seconds or on the stove for a few minutes. It isn’t often that ready-to-heat foods are good for you. While I don’t mind cooking, I love products that will heat up in no time for those nights that I don’t feel like cooking.

I cooked the SEEDS OF CHANGE® Spanish Rice in no time on the stove in no time on the stove. Mixed in the chopped vegetables and heated the refried beans. The whole meal took about 10 minutes for me to make and really is one I will make again. It was so good, I ate leftovers the next day for lunch.

GOODNESS FROM THE GROUND UP®

SEEDS OF CHANGE® has:

  • NO Preservatives
  • NO artificial colours
  • NO artificial flavours
  • IS Vegetarian Appropriate

SEEDS OF CHANGE® contains the finest organically grown ingredients.  And is the ONLY ready-to-heat rice and grain brand available in Canada.

SEEDS OF CHANGE® also donates 1% of sales to support and develop sustainable community based gardening and farming programs worldwide.

In Canada, SEEDS OF CHANGE® worked with local partner Evergreen to identify 12 community gardens from coast to coast who need grant money to get their garden started and keep them going all season long.

SEEDS OF CHANGE® established in 1989 as a small organic seed company and evolved into a strong producer of organic foods.

As a mother and a citizen in a farming community, I like supporting a company like SEEDS OF CHANGE® because they support not only bringing healthy great tasting food to our homes but also helping those in our communities around the globe.

The Seeds of Change® Canada Facebook page is also a  great resource for Canadians who are interested in growing or cooking with organic ingredients.

Old Fashion Lemonade #Recipe

With the warmer weather here, it is nice to enjoy a cool glass of lemonade. I prefer real lemonade over the store bought kind. It is all natural and tastes better. You can try lowering the sugar amount so you don’t have as much sugar in it.

Sit on your back deck and enjoy this great recipe. You can even do this recipe and then blend it with ice and make a lemonade slushie.

We went to my brother in law’s house for supper.

He had several slow cookers out with food. My son, Spencer, usually will not eat any meat with sauce on it because he wants ketchup. But he saw the meatballs and wanted to try them.

He ate 3 helpings of meatballs and at one point I had to tell him to save some for others.

I heard from my brother in law’s girlfriend the recipe and it is so simple, I had to share it with all of you while I make it today for my son!

Grilled Cheese & Bacon on a Pillsbury Crescent Roll Recipe

The other night I was trying to decide what to make for supper. I didn’t feel like a big meal but didn’t want take-out either. Then I decided on Grilled Cheese and Bacon but thought why not use the Pillsbury Crescent Rolls I have in the fridge waiting to be used.

So I made this very simple recipe and the kids loved it! I think I might change it up next time and add some tomatoes into it as well. A side salad went really well with this recipe. Below is the recipe but feel free to make it your own by adding what you like or try experimenting with different cheeses or meats.

A simple meal for nights you don’t have time to cook or don’t want Take-Out
Ingredients
  • 6 pieces of Low Sodium Bacon cut in half to make 12 pieces
  • 1 tube of Pillsbury Crescent Rolls
  • 1 340g bar of Cheddar Cheese
Instructions
  1. Cook bacon in frying pan until the texture you like.
  2. Shred cheddar cheese while bacon is cooking.
  3. When bacon is done set it on a paper towel on a plate to get rid of bacon grease
  4. Set oven to 375oF
  5. On a baking sheet roll out the Pillsbury Crescent Rolls
  6. put one or two pieces of bacon in the rolled out Pillsbury Crescent Roll & sprinkle cheese on top.
  7. Roll the roll over. I also tucked the sides so the cheese wouldn’t ooze out.
  8. Do it for all the Crescent Rolls.
  9. Put in oven when the oven is at the required temp.
  10. Cook for 10-15 minutes until Crescent Rolls are golden brown.
  11. Serve with a side salad or some fries.
  12. Enjoy!
