Easy Banana Bread Recipe

Who doesn’t love Banana Bread? I love making up this banana bread recipe for my kids lunches. (without the nuts of course.) I also enjoy the smell of it baking in the oven.

If you are going somewhere and want to give the host something as a thank you.  A few loaves of banana bread is great for just that.

  • 4 ripe bananas. (You can use 3 but I find more increases the taste of the bananas.)
  • 1/2 cup of sugar
  • 1/2 cup of vegetable oil
  • 2 eggs (beaten)
  • 2 cups of flour. (I use whole wheat at a ratio to 1:1 but you can use white.)
  • 1 tsp. of baking soda
  • 1/2 tsp. of salt
  • walnuts (optional)


  1. Preheat oven to 350oF.
  2. Mash bananas in a mixing bowl.
  3. Add sugar, eggs and oil. (Mix each ingredient in before adding the next one.)
  4. Sift dry ingredients together then slowly add to banana mixture. Mix each part together.
  5. Pour into a greased 5x9 pan (Add your walnuts at the top. I just sprinkle it in. Bake for 50 minutes or until you can put a fork in it and it comes out clean.
  6. I usually do muffins or mini loaves with this recipe and find within 20 minutes they are usually done.

Wrapless Refried Bean Burrito with Organic Rice

  • 1 package of Seeds of Change Spanish Style rice
  • 2 Green Pepper (you can add 2 if you want more.)
  • 2 Tomatoes
  • 1 can of refried beans
  • 1 cup of light shredded cheese. (I used marble)


  1. Dice up tomatoes and peppers.
  2. Heat rice in pot for 90 seconds with 2 Tbsps of water.
  3. In a frying pan, add green peppers and tomatoes just warming them up while the rice is cooking.
  4. Place rice in with vegetables and turn pan on low.
  5. Heat up refried beans on stove or microwave.
  6. Place rice on plate and top with refried beans then add sour cream and top with shredded cheese.
  7. Optional: Salsa.

Old Fashion Lemonade #Recipe


With the warmer weather here, it is nice to enjoy a cool glass of lemonade. I prefer real lemonade over the store bought kind. It is all natural and tastes better. You can try lowering the sugar amount so you don’t have as much sugar in it.

Sit on your back deck and enjoy this great recipe. You can even do this recipe and then blend it with ice and make a lemonade slushie.

  • 5 Lemons
  • 5 cups of Water
  • 1 1/4 cups of Sugar


  1. Peel the rinds from the 5 lemons and cut them into half
  2. Put rinds in a bowl. Sprinkle sugar on them and let them stand for an hour.
  3. Bring water to a boil in a covered saucepan then pour hot water over the sugared rinds.
  4. Allow mixture to cool for 20 minutes then remove the rinds.
  5. Squeeze the lemons in another bowl.
  6. Pour juice through a strainer into the sugar mixture.
  7. Stir well. Place in pitcher in the fridge.
  8. Serve with ice cubes

3 Ingredient Meatball Recipe ~ Slow Cooker




We went to my brother in law’s house for supper.

He had several slow cookers out with food. My son, Spencer, usually will not eat any meat with sauce on it because he wants ketchup. But he saw the meatballs and wanted to try them.

He ate 3 helpings of meatballs and at one point I had to tell him to save some for others.

I heard from my brother in law’s girlfriend the recipe and it is so simple, I had to share it with all of you while I make it today for my son!


3 Ingredient Meatball Recipe ~ Slow Cooker

  • 1 bag of precooked meatballs. ( 2lbs)
  • 1 (425ml) Grape Jam
  • 1 (425ml) BBQ sauce.


  1. Place Meatballs in a slow cooker
  2. Add the grape jam
  3. add bbq sauce
  4. Stir sauces and meatballs around.
  5. Cook on high for 4 hours.
  6. Stir and serve. (Great alone or on top of rice)

Mini Rolo Cookies

I love doing a big bake at Christmas time and I will tell you this is one desert everyone loves!

If I don’t freeze a batch (hide it deep in the freezer) then there would be none for Christmas day!

Mini Rolo Cookies

Serves: 75 cookies
  • 2-1/2 cups flour
  • 3/4 cup cocoa
  • 1 tsp baking soda
  • 1 cup white sugar
  • 1 cup firmly packed brown sugar
  • 1 cup butter, softened
  • 2 tsp vanilla
  • 2 eggs
  • 75 mini Rolo chewy caramels
  • walnut halves for garnish (optional)
  1. Step 1: Combine flour, cocoa and baking soda.
  2. Step 2: In separate bowl, beat sugar, butter, vanilla and eggs.
  3. Step 3: Stir in flour/cocoa mixture.
  4. Step 4: Chill dough for 1 hour.
  5. Step 5: Shape about 1-1/2 tsp of dough around a mini Rolo, making sure Rolo is completely covered.
  6. (If you are using walnut halves just place them in a bowl and dip the ball of dough before you place it on the cookie sheet )
  7. Step 6: Cool on cookie sheet for 1 hour in fridge
  8. Step 7: Bake 7-8 minutes at 375ºF.
  9. Step 8: Cool on wire rack.
  10. Makes 75 cookies

Grilled Cheese & Bacon on a Pillsbury Crescent Roll Recipe




The other night I was trying to decide what to make for supper. I didn’t feel like a big meal but didn’t want take-out either. Then I decided on Grilled Cheese and Bacon but thought why not use the Pillsbury Crescent Rolls I have in the fridge waiting to be used.

So I made this very simple recipe and the kids loved it! I think I might change it up next time and add some tomatoes into it as well. A side salad went really well with this recipe. Below is the recipe but feel free to make it your own by adding what you like or try experimenting with different cheeses or meats.

Grilled Cheese & Bacon on a Pillsbury Crescent Roll Recipe

A simple meal for nights you don’t have time to cook or don’t want Take-Out
  • 6 pieces of Low Sodium Bacon cut in half to make 12 pieces
  • 1 tube of Pillsbury Crescent Rolls
  • 1 340g bar of Cheddar Cheese
  1. Cook bacon in frying pan until the texture you like.
  2. Shred cheddar cheese while bacon is cooking.
  3. When bacon is done set it on a paper towel on a plate to get rid of bacon grease
  4. Set oven to 375oF
  5. On a baking sheet roll out the Pillsbury Crescent Rolls
  6. put one or two pieces of bacon in the rolled out Pillsbury Crescent Roll & sprinkle cheese on top.
  7. Roll the roll over. I also tucked the sides so the cheese wouldn’t ooze out.
  8. Do it for all the Crescent Rolls.
  9. Put in oven when the oven is at the required temp.
  10. Cook for 10-15 minutes until Crescent Rolls are golden brown.
  11. Serve with a side salad or some fries.
  12. Enjoy!
